🥕 Crispy Veg Cutlet Recipe
(Easy & Tasty Snack)
Crispy Veg Cutlet is a perfect evening snack that is crunchy from outside and soft from inside. It is made with mixed vegetables and simple Indian spices and tastes amazing with ketchup or butter bread.
📝 Ingredients :
🥕🫑Vegetables (finely chopped – you can choose as per your choice):
• Carrot
• Green beans
• Green bell pepper (capsicum)
• Cauliflower
• Green peas
Other ingredients:
▪︎ 1 onion – finely chopped
▪︎ 1 tsp ginger-garlic paste
▪︎ 1 green chilli – finely chopped
▪︎ 2 boiled potatoes – mashed
▪︎ Coriander leaves – finely chopped
▪︎ Cornflour – 2 to 3 tablespoons
▪︎ Bread crumbs – as required
▪︎ Oil – for shallow frying
🍁Spices:
• Coriander powder
• Garam masala
• Red chilli powder
• Turmeric powder
• Dry mango powder (amchur)
• Cumin powder
• Salt – as per taste
👩🍳 Method :
1) Finely chop all the vegetables – carrot, beans, capsicum, cauliflower and peas. (You can use any vegetables of your choice.)
2) Heat oil in a pan. Add chopped onion, ginger-garlic paste and green chilli.
Sauté for a minute.
3) Now add all the spices – coriander powder, garam masala, red chilli powder, turmeric powder, dry mango powder, cumin powder and salt.
Mix well.
4) Add the finely chopped vegetables and cook for about 5 minutes.
5) Add cornflour and a little bread crumbs to the mixture and mix well.
6) Now add boiled mashed potatoes and chopped coriander leaves. Mix everything nicely and allow the mixture to cool.
🥣 For coating -
7) Prepare a corn-starch slurry by mixing cornflour with water. Add a little salt and red chilli powder to it and keep aside.
Keep bread crumbs ready in a separate plate.
🍘 Shaping & Frying :
8) Take a small portion of the mixture and shape it into tikki or cutlet of your choice.
9) Dip the cutlet in the corn-starch slurry and then coat it well with bread crumbs.
10) Keep the prepared cutlets in the refrigerator for at least 30 minutes.
11) Heat oil in a pan and shallow fry the cutlets on medium heat until they turn crispy and golden brown from both sides.
🍽️ Serving Suggestions :
Serve hot and crispy veg cutlets with tomato ketchup or enjoy them with butter bread.
💡 Tips -
• Do not overcook the vegetables. They should remain slightly crunchy.
• Refrigerating the cutlets helps them stay firm while frying.
• You can also air-fry or pan-fry them using less oil.
