Quick & Easy Upma Recipe
Upma is a simple and comforting South Indian breakfast made with semolina. This quick version is perfect for busy mornings.
Method:
1) Dry roast 1 cup semolina on low heat until aromatic. Do not let it change colour. Keep aside.
2) Heat oil in a pan and add mustard seeds. Let them splutter.
3) Add 1 teaspoon chana dal and 1 teaspoon white urad dal. Roast until golden brown.
4) Add curry leaves, finely chopped ginger or ginger paste, and finely chopped green chilli.
5) Add finely chopped onion and sauté until transparent.
6) Pour in water in a 3:1 ratio, add salt and a pinch of sugar, and bring to a boil.
7) Lower the flame and slowly add the roasted semolina while stirring continuously to avoid lumps.
8) Cook until all the water is absorbed, then add desi ghee and mix well.
9) Serve hot.
