Winter Special Mutton Curry
Ingredients
- Chopped mutton – 1 kg
- Yogurt – ½ cup
- Red chilli powder – to taste
- Degi mirch – 1 tsp
- Coriander powder – 2 tsp
- Cumin powder – 1 tsp
- Turmeric powder – ½ tsp
- Salt – as required
- Garam masala – 1 tsp
- Mutton curry masala – 2 tsp
Whole Spices
- Mustard oil – 3–4 tbsp
- Cloves – 4–5
- Black peppercorns – 6–8
- Green cardamom – 3
- Black cardamom – 1k
- Bay leaf – 1
- Cinnamon stick – 1 small piece
- Dried red chillies – 2
- Cumin seeds – 1 tsp
Other Ingredients
- Onions – 3, chopped
- Garlic – chopped
- Ginger – chopped
- Green chillies – 2, chopped
- Tomatoes – 2, chopped
- Coriander stems – chopped
- Nutmeg – a pinch
- Kasuri methi – 1 tsp
- Fresh coriander leaves – for garnish
- Hot water – as needed
Method
- Marinate the mutton with yogurt, red chilli powder, degi mirch, coriander powder, cumin powder, turmeric, salt, garam masala, and mutton curry masala. Rest for 30 minutes.
- Heat mustard oil in a pressure cooker until lightly smoking. Add all whole spices and let them crackle.
- Add chopped onions and garlic. Sauté until golden brown.
- Add ginger and green chillies and cook for a minute.
- Add marinated mutton and roast well for 15 minutes.
- Add chopped tomatoes and a little salt. Cook until tomatoes soften.
- Add coriander stems, nutmeg, kasuri methi, and garam masala. Mix well.
- Add hot water, close the lid, and pressure cook for 4 whistles.
- Garnish with fresh coriander leaves and serve hot.
