Winter Special Mutton Curry

Mutton Curry


Ingredients

  • Chopped mutton – 1 kg
  • Yogurt – ½ cup
  • Red chilli powder – to taste
  • Degi mirch – 1 tsp
  • Coriander powder – 2 tsp
  • Cumin powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Salt – as required
  • Garam masala – 1 tsp
  • Mutton curry masala – 2 tsp

Whole Spices

  • Mustard oil – 3–4 tbsp
  • Cloves – 4–5
  • Black peppercorns – 6–8
  • Green cardamom – 3
  • Black cardamom – 1k
  • Bay leaf – 1
  • Cinnamon stick – 1 small piece
  • Dried red chillies – 2
  • Cumin seeds – 1 tsp

Other Ingredients

  • Onions – 3, chopped
  • Garlic – chopped
  • Ginger – chopped
  • Green chillies – 2, chopped
  • Tomatoes – 2, chopped
  • Coriander stems – chopped
  • Nutmeg – a pinch
  • Kasuri methi – 1 tsp
  • Fresh coriander leaves – for garnish
  • Hot water – as needed

Method

  1. Marinate the mutton with yogurt, red chilli powder, degi mirch, coriander powder, cumin powder, turmeric, salt, garam masala, and mutton curry masala. Rest for 30 minutes.
  2. Heat mustard oil in a pressure cooker until lightly smoking. Add all whole spices and let them crackle.
  3. Add chopped onions and garlic. Sauté until golden brown.
  4. Add ginger and green chillies and cook for a minute.
  5. Add marinated mutton and roast well for 15 minutes.
  6. Add chopped tomatoes and a little salt. Cook until tomatoes soften.
  7. Add coriander stems, nutmeg, kasuri methi, and garam masala. Mix well.
  8. Add hot water, close the lid, and pressure cook for 4 whistles.
  9. Garnish with fresh coriander leaves and serve hot.
