🥚 Easy & Flavorful Egg Masala Recipe

⭐ Ingredients (Serves 2)👇
• 4 eggs
• 2-3 onions, finely chopped
• 5 garlic cloves, finely chopped
• 1-inch ginger piece, finely chopped or grated
• 2 green chilies, finely chopped
• 2 small tomatoes or 1 large tomato, chopped (you can also use tomato paste)
• 1 tbsp oil
• 1 tsp cumin seeds
• A pinch of heeng (asafoetida)
• Whole spices:
° 2 cloves
° 5 black peppercorns
° 1 green cardamom
•Spices:
° ½ tsp turmeric
° 1 tsp red chili powder
° 1 tsp coriander powder
° Salt to taste
° ½ tsp garam masala
• 1 big spoon non-sour yogurt
• Fresh coriander leaves for garnish
🍳 Instructions👇
1. Temper the spices
Heat oil in a pan. Add cumin seeds and let them crackle.
Add heeng, then add cloves, black peppercorns, and green cardamom. Sauté for a few seconds until aromatic.
2. Sauté the base
Add the finely chopped onions, garlic, ginger, and green chilies.
Cook until the onions turn golden brown.
3. Add tomatoes
Mix in the chopped tomatoes (or tomato paste).
Cook until the tomatoes soften and the oil begins to separate.
4. Add powdered spices
Add turmeric, red chili powder, coriander powder, salt, and garam masala.
Pour in a little water and cook for 1–2 minutes to blend the spices well.
5. Add yogurt
Lower the heat and stir in the non-sour yogurt.
Mix continuously so it doesn’t curdle.
6. Prepare for eggs
Add a little more water to adjust consistency.
Using a spoon, create four small wells in the masala—one for each egg.
7. Add eggs
Crack 4 eggs directly into the wells, keeping them whole like a half-fry.
8. Cook covered
Cover the pan with a lid and cook on low flame for 10 minutes.
9. Check doneness
Open the lid and check if the eggs are fully cooked to your preference.
10. Garnish & serve
Top with freshly chopped coriander leaves and serve hot!
